    Malibu Barbie Cocktail

    Barbie the Movie has been so highly anticipated that to celebrate I created this Malibu Barbie Cocktail! It's pink, glittery, bubbly and fun!! It is the perfect cocktail for your next party or get together!

    Other movie themed drinks that are my favorites! Yippie Ki Yay - Die Hard Cocktail and Hocus Pocus Life Potion Cocktail!

    I am so excited for the Barbie Movie! The marketing team have been working overtime! Even if you are not a fan of Barbie, they have done such a great job promoting it that I see why everybody wants to see it!

    The color pink is everywhere and honestly I am loving it!! The Barbie movie has broken numerous records: Biggest opening weekend of the year, the highest grossing film worldwide in 2023 and the highest earning live action movie worldwide by a female director EVER, amongst many other accomplishments!! Okay! Greta!!!

    This cocktail was literally inspired by my nostalgia for Barbie, for Malibu Barbie! I am a child of the late 70's/early 80's and my favorite Barbie of the era was the Night/Day Barbie

    What you will need to make the cocktail

    This is an easy cocktail which only requires three ingredients:

    • Dragon fruit simple syrup - You can use the Monin one or you can make your own at home using my dragon fruit simple syrup recipe.
    • Three Olives Rosé Vodka - This is my preferred brand for this cocktail. The rose flavor gives it a crisp flavor.
    • Sparkling Lemonade - I am using Aldi Nature Nectar brand. This adds bubblies to the cocktail!
    • Edible Glitter - Fancy Sprinkles edible glitter is my got to for glitter in cocktails.

    How to Make the Malibu Barbie Cocktail

    This is a super fun and easy cocktail. Here are the steps:

    • In a cocktail shaker add the dragon fruit syrup and the vodka. Add ice. Shake vigorously for about 10 seconds.
    • Pour into a cold glass and top with the sparkling lemonade. Sprinkle Edible glitter and stir.

    Add a pink flower for garnish. This is entirely optional.

    Helpful Tip: You will only use ice on the cocktail shaker. You will not add ice to the glass. BUT as always you can add ice if you'd like.

    Substitutions

    This cocktail can be altered with a few substitutions:

    • Gin - instead of Vodka, you can use Gin or Plain Vodka.
    • Tequila Rose - this tequila works very well with his cocktail. The simple syrup can be omitted if Tequila Rose is used.
    • Chambord Liqueur - This liqueur is made our of black raspberry. Add ½ oz of coconut cream along with the Chambord to make the iconic barbie pink signature color.
    • Bubbles - use Champagne or Prosecco instead of bubbly lemonade

    Variations

    • Non-Alcoholic - add regular lemonade and skip the alcohol. This is great if you want to make it kid friendly.
    • Food Coloring - I know this is not ideal but if you don't have dragon fruit you can always use red and white food dye.
    • Red Juices - Cranberry, Tart Cherry and Pomegranate juice can work in this cocktail as well.

    Fun Idea: This cocktail can work great for a girls night in where all your friends make their own cocktail and add the glitter, bachelorette party, birthday party, and Halloween Barbie Themed party.

    FAQ

    What other spirit can you use instead of Rosé Vodka?

    Rum, Gin, Tequila, and Chambord Liqueur, Tequila Rose are always a great susbtitute.

    What can I use instead of Dragon Fruit syrup?

    Cranberry, Tart Cherry and Pomegranate Juice can be use in lieu of the syrup.

    Equipment

    • Cocktail Shaker
    • Bar Spoon
    • Glass

    Ingredients
     

    • 1 oz Dragon Fruit Simple Syrup
    • 1.5 oz Rosé Vodka
    • Sparkling Lemonade
    • Ice
    • Edible Glitter

    Instructions
     

    • In a cocktail shaker add ice, syrup and vodka.
    • Shake for about 10 seconds.
    • Pour into glass. Top with lemonade.
    • Sprinkle with edible glitter. Stir using the bar spoon.
    • Enjoy!
