    Why Nutella Banana French Toast

    This weekend is our 6th wedding anniversary. Through out the years we have always traveled somewhere, stop for brunch, dinner and a brewery or cocktails. This year is different. We are staying home and probably picking up something that we have been craving. We don't feel comfortable yet going out and sitting at a restaurant.

    One of our first dates 12 years ago was for breakfast. We have always shared our love for food. So I wanted to make it special and make French Toast but not any french toast. What better way to fancify your french toast than using fancy bread: Cue Challah Bread. Toast it to perfection, then top it with Nutella, Bananas, Whipped Cream and drizzled with warm pure maple syrup. I mean that is one of life's simple pleasures!

    Challah Bread:

    Traditionally, Challah is defined as any bread that is made for use in Jewish ritual.

    During the first few thousand years of Jewish life, Challah included everything from rich layered breads baked overnight in Yemen, pita pockets in Syria and lepeshka flatbread in the Caucasus.

    Later on, as challah traveled with the Jews, the bread took on a Hungarian costume of poppy seeds, soaked up orange blossom water in Libya, and mixed with pumpkin in Spain.

    In the Ashkenazi world — that of the Jews who made their way over time to Central and Eastern Europe — challah evolved into the fluffy, egg-enriched, sugar-laced, six-stranded braid that we recognize. (Source: NY Times: A Twist on the Traditional Challah)

    For this recipe I will be using a Challah loaf I got from a local bakery a while back and kept frozen. I have been working on making my own loaves at home!

    Making the french Toast:

    Preparing this recipe is super easy. It is perfect for breakfast, brunch or even dinner. There has been many days where I have made French Toast for dinner. Sometimes you want something comforting.

    You will want to slice the Challah bread into ½ thick slices.

    In a bowl mix eggs, almond milk, vanilla and monk fruit sweetener. For this recipe I used Golden Sugar from Lakanto.

    Dip bread in milk + egg mixture coating both sides.

    Heat griddle with 1 tbsp of butter.

    Cook in griddle until both sides are brown.

    Spread Nutella or Suntella, bananas on the first two layers of the toasts.

    Top with Strawberry and Cool Whip. Drizzle with syrup.

    Nutella Banana French Toast

    This is a great recipe to prepare for special occasions or just because. You can prepare the mixture and dip the bread overnight. Make sure that the bread is really dry that way it absorbs all the egg and milk mixture and you don't end up with a soggy toast.

    • Mixing Bowl
    • Measuring cup
    • Measuring Spoon
    • Spatula
    • Griddle or Skillet

    Ingredients
      

    • 1 loaf Challah Bread
    • 3 Eggs
    • 1 cup Almond milk
    • 1 tbsp Monk fruit Sweetener I used Lakanto
    • 1 tsp Vanilla I used Molina
    • 2 tbsp Butter I used the Tillamook
    • 2 bananas
    • 4 tbsp Nutella or Suntella
    • Organic Pure Maple Syrup
    • Cool Whip
    • Strawberry for garnish

    Instructions
     

    • In a bowl mix Eggs, milk, vanilla and Monkfruit sweetner.
    • Slice challah bread into ½ thick slices, you will need 8 slices.
    • Heat griddle with 1 tbsp of butter.
    • Dip bread in milk and egg mixture on both sides.
    • Cook in griddle until both sides are browned.
    • spread Nutella, bananas on the first two layers of the toasts.
    • Top with Strawberry and Cool Whip. Drizzle with syrup.
