    Low Carb Cauliflower & Sausage Stuffing

    Eating during the Holidays doesn’t have to be bad. I’ve create a side that is not only low carb but easy to make and delicious with only 2.8 Net Carbs!!!!

     

    I love stuffing, dressing any way you want to call it! its my favorite side, if I have to choose. I love to make plantain stuffing but it has a lot carbs and make you feel bloated! This dish  will be a hit on your Thanksgiving dinner shindig.

    What you will need:

    2 ⅔ cups of Cauliflower Rice ( I used Fresh Tj’s NOT frozen)

    16 oz of Mild Ground Italian Sausage ( I used HEB)

    85 grams of Mixed Frozen Peppers ( I used Trade Joe’s)

    I tsp Herbs de Provence (TJ’s)

    1.0 Tbsp Pomeganate Seeds (TJ’s)

    The How to:

    Cook the sausage until no longer pink.

    Stir in Peppers and Herbs de Provence

    Drain and place sausage with peppers in a bowl

    In the same skillets, cook cauliflower until it’s soft.

    Mixed with sausage and peppers, sprinkle with pomegranate seeds.

    Get a serving and Enjoy!

    This has been one of my favorite Thanksgiving! I hope this gives you an idea that you can have great food without sacrificing flavor.  I try to stay within my Low Carb intake and at the same time creating a flavorful dish! What’s your favorite dish?
