I love summer days. It means lounging on a patio and sippin' on a good ol' margarita while barbecuing. Finally, in the PNW we are getting warmer weather, what I really mean that it is over 63 degrees! Which is nice because I am used to 100 plus degree Texas Summers! I have been busy making summer cocktails and I am excited to share them with you in the next few months. This is one of the easiest margaritas you can add to your repertoire. It only requires a few ingredients. It's my easy watermelon cucumber margarita!
It is all about that Watermelon Cucumber juice
Every year, around this time, I wait for Trader Joe's to release their Watermelon Cucumber Juice. It's usually on the shelves by April / May. The perfect summer beverage. It is so refreshing. You can also use it to make different cocktails, sangria, punch, Even Popsicles!
Besides cooking, slingin' a good cocktail is my specialty. Throughout the years I have experimented with different juices, fruits, spirits and libations to create delicious concoctions.
Watermelon Juice pairs well with Tequila, Mezcal and Gin. The first time I tried this watermelon cucumber juice, I was hooked. So immediately I started planning what I was going to use it for.
One of the first cocktails I created using this juice was a Watermelon Cucumber Martini. I remember clearly because I was celebrating that I had just purchased my domain name and finally was on my way to blogging! (Small Victories!)
Memorial day and July 4th are approaching and this could make a perfect cocktail for your quarantine BBQ and it pairs well this awesome Carne Asada, recipe here. While we are not 100% back to our daily activities, you can still enjoy a cocktail here and there, especially when is this easy to make. Just a reminder, since you are at home drink responsibly. With that being said, a mocktail is another option. Substitute the alcohol for mineral water like Topo Chico.
Easy Watermelon Cucumber Margarita Recipe:
Ingredients:
4 oz Watermelon Cucumber Juice from Trader Joe's
2 oz Tequila Blanco - I use Patron
Chamoy - Tajin for the rim
2 short glasses
1 cocktail shaker
Jigger
1 cup of ice
Lime wheels and Watermelon Slices
Let's shake it:
Prepare your glasses: In a shallow bowl, pour chamoy and cover the rim as you would with lime. In a separate bowl pour Tajín and cover the rim. Now you are ready for the cocktail.
In an iced cocktail shaker add watermelon cucumber juice, tequila, Tajín and shake vigorously. Pour into glasses. Garnish with lemon, watermelon slices and sprinkle with Tajín . For a mocktail Substitute the tequila for sparkling water.

- 2 Short Glasses (Whiskey)
Ingredients
- 4 oz Watermelon Cucumber Juice I use Trader Joe's
- 2 oz Tequila Blanco I use Patron
- Chamoy
- Tajin
- Lime Wheels
- Watermelon Slices for garnish
Instructions
Prepare Your Glasses:
- In a shallow bowl, pour chamoy and cover the rim as you would with lime.
- In a separate bowl pour Tajín and cover the rim. Now you are ready for the cocktail.
Let's Shake it!
