    Loaded Cheesy Fries with fried eggs and Pollo Asado

    I love a quick and easy meal. I recently got an air fryer and it has been put to the test! It's my favorite appliance. Yesterday for dinner I made these Loaded Cheesy Fries with fried eggs and Pollo Asado. They are super easy to make and you won't have extra dishes to wash!     Preparing the seasoned fries

    Potatoes: I used Russet potatoes. They have a neutral potato flavor, a fluffy, creamy and soft texture, and are best for baking, mashing and making French fries. Most people think that Idaho and Russet are two different kind of potatoes. Idaho refers to the harvesting location and Russet is for the kind of potato. For this recipe you will need about 10 medium Russet potatoes.

    Oil: Since you are Air frying them, you won’t need a lot of oil. However you will still need some oil. After all you are frying but not deep frying. I prefer Peanut or Avocado oil because they have a higher smoking point – 520 for Peanut Oil and 450 for Avocado oil 520 degrees. A little bit goes a long way.

    Seasoning: Around these parts we like to season our grub. Recently I shared my own PuertoRican Adobo seasoning recipe that you can easily make at home. It is my most pinned recipe. You can find the recipe here. As always you can add the amount of adobo to your preference.

    Pro Tip:

    I am all about efficiency in prepping and cooking. During the week I usually have my husband Barbecue chicken thighs and legs. Then, I separate them in glass containers - helping the environment! I shred about 6-7 chicken thighs and freeze to save for future use.

    Once you are ready to make a recipe, all you have to do is reheat it in the air fryer or oven and voila!

    I do this also for sauces and ground beef.

    You can check my adobo fries recipe here where I show you how I make them in the air fryer. Below I am sharing the recipe for a variation of the Mayo Ketchup sauce that I also shared in the recipe linked above.

    While you wait on the fries, let make the Spicy Mayo Ketchup sauce!

    • ½ c Mayo Kewpie
    • 3 tbsp ketchup
    • 1 tbsp Sriracha
    • ½ tbsp Garlic Powder

    In a bowl combine mayo, ketchup, sriracha and garlic powder. Set aside.

    These spicy fries pair well with a light beer like Corona Premier.

    Putting together the dish:

    Once the fries are cooked in the air fryer, spread them in a sheet pan. Cover with shredded Cheese - I used mozzarella but you can always use any cheese you prefer.

    Top with the chopped chicken and add more cheese, because why not? Broil for about 3-4 minutes or until cheese is melted.

    Fry 4 eggs with one tbsp of oil. I like mine over easy.

    Drizzle with spicy mayo ketchup sauce. Tip with eggs, cilantro and tomatoes. You can also add avocado and Jalapeños.

    These Loaded Cheesy Fries with fried eggs and Pollo Asado are my kids favorite. It is a shareable meal and you don't really need extra dishes. You can eat it right off the sheet pan.

    Equipment

    • large baking sheet
    • thongs
    • Glass Mixing Bowl
    • Measuring Spoons
    • Air Fryer (you can always cook fries in the oven)

    Ingredients
      

    • 8 Medium Russet Potatoes
    • 2 tbsp avocado oil
    • 3 tbsp Adobo LINK FOR RECIPE ON THE BLOG
    • 2 c chopped roasted chicken I bbq during the week, shred and save for later.
    • ½ c Mayo Kewpie
    • 3 tbsp ketchup
    • 1 tbsp Sriracha
    • ½ tbsp Garlic Powder
    • 2 c Cheese ( I used mozzarella) I used mozzarella
    • 4 large Eggs
    • 1 large Roma tomato (chopped)
    • Cilantro + Green Onions

    Instructions
     

    • Cut the Fries in french dry shape. Pour Olive oil and Adobo. Shake until completely coated.
    • Cook in the air fryer for 20- 25 minutes. Shaking every 6 minutes.
    • While potatoes cook, in a bowl combine mayo, ketchup, sriracha and garlic powder.
    • Once Potatoes are done transfer to a sheet pan. sprinkle fries with cheese. Then add Chicken. top with more cheese. Because why not?
    • broil for 3-4 minutes until cheese is melted.
    • Fry 4 eggs with one tbsp of oil. I like mine over easy.
    • Drizzle with spicy mayo ketchup sauce.
    • Tip with eggs, cilantro and tomatoes.
