    What are Langostinos?

Depending where you live, langostinos go by different names. In the Caribbean langostinos are known as crayfish. It is also known as squat lobster.

The Langostino is a Spanish word that means small lobster. The flavor and texture of the Langostino is sweet similar to lobster meat, but its neither a lobster or prawn. Therefore calling langostino a lobster is not interchangeable. It is somewhat in the crab family. I know confusing but they are so delicious!

You can find Langostino meat at Costco for about $25 or at Trader Joe's for $12. I usually get it at Trader Joe's.

    What is Truffle?

One of my favorite ingredients to cook with are Truffle Oil, Butter and Salt. Truffles are a fungi, like mushrooms. They are costly because they are hard to find, a bit frustrating to harvest and almost impossible to store for a long period of time. There's a lot of varieties of Truffles in the world bu the renown ones are black truffles from France and white truffles from northern Italy.

If you have never tried truffle, I can describe it as having a distinctive and strong flavor especially when it is pure. Like I mentioned before because of the costly price of truffles some people prefer to use Truffle Oil. It is basically Olive or Sunflower oil that has been infused with black or white truffles. Cost varies from $12 to $ 34 dollars. A bottle of pure Truffle oil can cost up to $174 or more!

For this recipe I used Black Truffle Salt from Truffle Queen from their store in Pike Place in Seattle!

What you will need to make the Brown Butter

If you have never made brown butter you are for a treat. It is one of the best things in life. It takes some patience and care to get the butter browned perfectly.

In a stainless steel skillet in medium heat drop a whole stick of butter. It will start to melt and you will want to stir it constantly until the butter slowly turn brown and foamy. Turn off the heat, add the Truffle Salt, stir and let it cool off before storing and using.

Putting Together the Warm Langostino Rolls with Truffle Butter

First and foremost you want to thaw out your langostinos. They have a lot of liquid and you don't your sauce to be watery. This step is crucial and you don't want to skip it!

Here is how you thaw out langostinos:

Fist, Remove langostinos from the package. Then Place them on a large colander, placing the colander in a bowl. This will catch all the water dripping from the Langostinos. Lastly place in the refrigerator overnight.

When you are ready to heat, prepare and serve, remove the langostinos from the refrigerator. Pad dry the langostinos and set aside.

Next, in a skillet heat the brown butter adding chopped garlic in low-medium heat. This prevents the garlic from burning. Then add the langostinos and more truffle salt if needed. Stir for a few minutes until warm.

Next brush both sides of the bread with the truffle brown butter mixture then in a heated skillet brown on both sides.

Gently spread the bread open and add langostino. Top with chives. Pour more Truffle Butter if you like. Eat immediately.

    Frequent Asked Questions:

What can I use instead of langostinos?

Instead of langostinos you can use crawfish tails, lobster or shrimp. These are intended to be an alternative to lobster rolls.

What kind of bread can I used instead of Brioche Buns?

You can use regular hot dog buns, sub rolls, or potato rolls.

What can I use in place of Truffle salt or butter?

Truffle has a very strong flavor so if you don't like it you can omit altogether and just use regular salt. You can also add creole seasoning to the butter.
